Goma Tragacanth 25g


Due to its relative stability to heat, acidity and aging, Tragacanth gum is widely used as a thickener and stabilizer in normal and low calorie salad dressings. For similar reasons, it is used in seasoning, condiment, sweet pickles, liqueurs and mayonnaise sauces. It is used in about 0.4 to 0.75% in the above products. Tragacanth gum provides clarity and shine to frozen cake fillings and fruit toppings and when fruit purees are used. Ideal for use in acidic products.

Powdered vegetable origin, suitable for fondants. Elastifying and plasticizing, accelerates drying. Perfect for creating figures or flowers. Also recommended as an additive for DIY fondants. Natural substitute for CMC (carboxymethylcellulose).
